How To Make Jollof Rice

Jollof rice is a classic West African dish that's beloved for its rich flavor and colorful appearance. It's a staple food at parties, weddings, and other special occasions. But with this recipe, you can enjoy jollof rice anytime in the comfort of your own home.

Ingredients:

  • 2 cups of long-grain rice
  • 2 medium-sized onions, chopped
  • 3 fresh tomatoes, blended
  • 3 red bell peppers, blended
  • 3 scotch bonnet peppers, blended
  • 2 teaspoons of garlic powder
  • 2 teaspoons of ginger powder
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of curry powder
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • 1 teaspoon of salt
  • 1/4 cup of vegetable oil
  • 2 cups of chicken or vegetable broth

Instructions:

  1. Rinse the rice with cold water and set it aside to drain.
  2. In a large pot or Dutch oven, heat up the vegetable oil over medium-high heat.
  3. Add the chopped onions and sauté until they're translucent.
  4. Add the blended tomatoes, bell peppers, and scotch bonnet peppers to the pot and stir.
  5. Add the garlic powder, ginger powder, smoked paprika, curry powder, dried thyme, dried basil, and salt to the pot and stir everything together.
  6. Let the mixture simmer for about 10 minutes, stirring occasionally.
  7. Add the rice to the pot and stir until it's coated with the tomato and pepper mixture.
  8. Add the broth to the pot and stir everything together.
  9. Reduce the heat to medium-low and cover the pot with a lid.
  10. Let the rice cook for about 20-25 minutes or until the liquid has been absorbed and the rice is tender.
  11. Fluff the rice with a fork and serve hot.

Jollof rice is best enjoyed with some fried plantains, grilled chicken or fish, and a side salad. It's a hearty and flavorful dish that's perfect for sharing with family and friends.
